Flawless Quesadillas


Tribe - I've missed you all so much, however life has been happening at a rapid pace. I'll update you all very very soon. I wanted to pop in to share a delicious new recipe. I hope this finds you in the best health. So my daughter Zen Isla wanted *Vegan Quesadillas* and it's been a while since we had them. We've been traveling a lot lately, so I answered her request, we had a blast and created the most amazing *Flawless Family Approved* Quesadillas loaded with black beans, super cheesy vegan cheese & lots of veggies. Here's a recipe just for you!

Flawless Approved Vegan Bean Quesadilla

Flawless Quesadillas Recipe:

You will need the following ingredients:

2 cans of black beans

1 medium red pepper chopped

1 medium green pepper chopped

1 medium spanish onion chopped

1 pack of gluten free tortillas (I like food for life brand)

3 tbsp of olive oil

1 tsp of cumin

1 tsp garlic powder

1/2 cup of fresh salsa of choice

2 tbsp of cilantro

1/2 cup of sliced mushrooms (I love baby bellas)

1 pack each of "Daiya" cheddar & mozzarella shredded vegan cheese

Directions:

1.In a medium sauce pan on medium heat add 1 tbsp of olive oil, sliced mushrooms, half of the onion chopped, half of the green & red peppers chopped, a pinch of sea salt to taste. Saute, stirring occasionally for about 7 minutes or so. Remove from heat and set aside.

2. In the same sauce pan add the remaining chopped onion, red & green peppers & 1 tbsp of olive oil. Heat for 7 minutes then add black beans and remaining spices and herbs. Let simmer for 15 minutes covered.

3. In a medium frying pan heat 1 tbsp of olive oil, add the gluten free tortilla, heat for 1 minute, add 2 tbsp of the following; sauteed veggies, black beans, vegan cheese, salsa and a pinch of cilantro. Heat for 1 minute and fold the tortilla. flip the now quesadilla and heat until cheese has melted (roughly 1-3 minutes) remove from heat and cut in half, repeat.

Tribe, please note you can be creative & add your own twist to this recipe. I hope you enjoy it and season to your liking. Make as many as you like.
